This is a great salad in summer when mangoes are plentiful - the soy sauce and chilli break up the sweetness too
Ingredients
- 2 Ripe Mangos
- 1 large Cucumber
- 1 Red Bell Pepper
- 1/4 Red Onion - thinly sliced
- 1/4 cup Celantro - Corriander finely chopped
- 2 tbps Fresh squeezed lime juice
- 2 tbsp Soy Sauce
- 1 tbsp Honey or maple syrup
- 1/2 tsp Chilli flakes or chopped fresh chilli
Instructions
- Mix bell pepper, mango, onion and cucumber in a large bowl
- Mix the rest of the ingredients and pour over the salad

A very fresh and unusual salad
