A recipe from my beloved sister - only better ;-}
Ingredients
- 1 cup Coconut Oil or melted Butter
- 235 grams Plain white flour (not self raising)
- 2 tsp Baking Powder
- 1 tsp Bicarbonate of Soda
- 1 tsp Salt
- 285 g Wholemeal flour
- 150g Brown sugar
- 90g All Bran Flakes (saltana bran is perfect too)
- 115g Rolled Oats
- 120 g chopped Almonds
- 250g Seeds (Pumpkin,linseed etc)
- 325ml Water
- 1tblsp apple cider vinegar
- 5 tbsp Raisins or saltanas
- 1 pinch Cinnamon powder
Instructions
- This takes hours - not to make but to dry up the rusks so plan on a weekend or when working from home
- Preheat the oven to 180 deg
- Use a shallowish dish about 30x30cm - Line tray with baking paper as it really helps to get the rusks out when baked !
- Nothing can flop so no point in sifting the flour - just mix all the dry ingredients together in a big ass bowl
- In another bowl - whisk or at least try with a fork to excitedly stir the wet ingredients - happy times!
- I added a few tblsp of desiccated coconut and a few dribbles of proper Canadian maple syrup and a pinch of cinnamon - whatever you like add - goji berries anyone?
- Spoon the mixture into a lined baking pan - it should be a moist mixture but really firm - spread it evenly and then cut it into squares - about 4x4cm - Whatever size you elect it is a must do step ,if you don't cut before baking you will have one massive rusk and any attempt to cut it at this stage will disappoint - promise
- (once sliced into your elected sized squares -and this means you have sliced through the mixture and it may not look like you have as it will tend to rejoin - don't stress) Bake for about 45min - then open and leave oven door ajar - maybe or another 30 min then turn the oven down to like 150 deg and leave for another hour.
- I then turn them out of the tray and put directly onto a rack in the oven - dry them out as you see fit Some say bake 4 hours on low - I prefer a higher heat with the oven door open but for less time - each to their own.
- One time I forgot them in the oven and they were on the dark side of golden which everyone complimented -So don't stress - they will be awesome. Just ensure they are dry inside and crunchy to the bite.

Awesome tasty and relatively healthy snack or meal replacement option. These are I believe a great filler snack - no nasty ingredients and so easy to tailor to your tastes!
